“Sanzoku-yaki” is a well know dish of Matsumoto prefecture with a nice big volume.
The chicken leg is soaked in a special sauce, and is fried until it is juicy and the skin is crispy. This is a very tasty local dish of “Shinshu” Matsumoto that will entertain you both with sight and taste.
The history of “Sanzoku-yaki”
It is said to have started about 50 years ago. It is a very popular local dish in the central Shinano area of Nagano prefecture (Matsumoto city, Shiojiri city, and Azumino city). There are several origins to the name.
The most famous one is that a long time ago, there were bandits (Sanzoku) that were stealing from the visitors. The word for stealing in Japanese is “Toriage”, and fried chicken in Japanese is also “Toriage”. It is said to have started from this story and the words, and the image of the outrageous bandits is performed on a dish by dynamically using the whole chicken leg.
